Fresh Mango Salsa Recipe

For a light fruity twist on fresh salsa try Mango Salsa. This recipe combines the best of sweet fruit, onion and tangy lime juice with a little touch of spice. This Mango Salsa is unbelievably delicious but is deceptively healthy! It’s easy to prepare and can be eaten immediately or refrigerated to serve later. It’s great too because you can customize it with corn, black beans, tomatoes, quinoa or any of your other favorites.

Fresh Mango Salsa Recipe

  • 3 ripe mangos, diced (see photos)
  • 1 medium red bell pepper, chopped
  • ½ cup chopped red onion
  • ¼ cup packed fresh cilantro leaves, chopped
  • 1 jalapeño, seeded and minced
  • 1 large lime, juiced (about ¼ cup lime juice)
  • 1/4 teaspoon sugar
  • ⅛ to ¼ teaspoon salt and pepper, to taste

This is an easy way to cut up Mango.

INSTRUCTIONS

In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime.

Using a large spoon, stir the ingredients together. Season to taste with salt, and pepper then stir again. Allow to marinate together for 10-15 minutes. Serve with your favorite fresh veggies, corn chips or tortillas.
