Corn is a great vegetable that is prevalent this time of the year in the garden. So Corn is a delicious natural for salsa. It’s easy to make and it will keep for 3-4 days in the refrig.

Freshly harvested corn has the sweetest, most delicious flavor, but it loses that flavor as time goes on. So use it quickly. If you are in the mood for smoky you can grill your ears of corn before you use it.

Fresh Corn Salsa Recipe

Ingredients:

  • 3 cups raw corn kernels (cut off of 4 cobs of shucked sweet corn)
  • 1 cup finely chopped red onion
  • 1 to 2 medium jalapeños, finely chopped (You decide how spicy you want your salsa to be)
  • ½ cup finely chopped fresh cilantro
  • ¼ cup lime juice
  • 1 tablespoon white wine vinegar
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ½ teaspoon fine sea salt

Directions

In a medium serving bowl, combine all of the ingredients. Stir to combine.

You can adjust the taste to add more zing if you want to. You can add another teaspoon of vinegar or a tablespoon more lime juice. For more flavor overall, add another pinch of salt. For more spice, add more jalapeño.

Allow the salsa to marinate for at least 20 minutes before serving.
